Every number on it has consequences — the wrong power requirement means an expensive electrical upgrade, the wrong footprint means equipment that won’t fit, the wrong capacity means a machine that can’t keep up. Reading one well, and knowing which figures actually matter for your kitchen, is a core buying skill. Here’s what to check before you commit to any piece of commercial kitchen equipment.

Dimensions and clearances

Start with the physical fit. Check the external dimensions — width, depth and height — against the exact space the unit will occupy, and don’t forget the path it has to travel to get there: doorways, corridors, lifts and the kitchen entrance. Then look for the required clearances: most equipment needs air gaps around it for ventilation, service access or heat dissipation, and these are easy to overlook.
