It’s a genuine trade-off worth weighing during design, especially in older premises or temporary sites where upgrading the electrical supply isn’t practical. Bear in mind that gas brings its own approvals, ventilation load and SCDF fire requirements, and that a mixed gas-and-electric kitchen can actually be the most resilient setup — if one supply is constrained, the other carries the load.
