Overview
The Reverse-Flow Offset Smoker 1200 is a serious low-and-slow pit built for pitmasters who cook big and cook often. In a reverse-flow design, heat and smoke from the offset firebox are drawn under a solid baffle plate to the far end of the cooking chamber, then pulled back across the food to a chimney mounted above the firebox. That extra pass evens out the heat, so both ends of the grate sit within a tighter temperature band than a traditional offset.
The 1200 refers to its size class — a long cooking chamber with generous grate space for multiple briskets, full rib racks or a whole hog. Built from heavy 1/4" (roughly 6mm) steel plate, the chamber acts as a thermal battery: once it is up to temperature it shrugs off wind, rain and the temperature swings that plague thin-walled smokers. That mass is what lets you hold 110–135°C for a 12-hour cook while burning less wood.
It suits caterers, BBQ restaurants, competition teams and dedicated home pitmasters who want the authentic wood-fired flavour of a stick burner with the forgiving, even heat of a reverse-flow layout.
Key features
- Reverse-flow baffle plate delivers even heat from end to end and reduces firebox-side hot spots.
- Heavy 1/4" steel cooking chamber for outstanding heat retention and temperature stability.
- Large 1200-class chamber with room for several briskets, multiple rib racks or a whole hog.
- Offset firebox burns wood splits or a charcoal-and-wood mix for genuine low-and-slow smoke.
- Baffle doubles as a water-collecting drip pan, adding moisture and easing clean-up.
- Adjustable firebox intake and chimney damper for precise airflow and temperature control.
Ideal applications
Built for high-volume, long-session cooking: competition brisket and pork, catered BBQ for weddings and corporate events, restaurant smoke programmes, and backyard pitmasters cooking for a crowd. The even heat and large grate make it easy to run full loads without rotating racks constantly.
It is equally at home on a competition circuit and behind a food stall, where consistent results across a long day matter more than anything else.

Frequently asked questions
What is a reverse-flow offset smoker?
A reverse-flow offset uses a solid steel baffle plate under the grate to route heat and smoke to the far end of the chamber first, then back across the food to a chimney near the firebox. This extra pass evens the temperature end to end and reduces hot spots, making long cooks more forgiving and consistent.
Why does steel thickness matter on a smoker?
Thicker steel stores more heat, acting like a thermal battery. A 1/4" chamber holds temperature through wind, rain and lid openings, so the fire needs fewer adjustments and less fuel. Thin steel reacts quickly to every gust and change, causing swings that are hard to control over a 10–12 hour brisket.
How much meat can the 1200 cook at once?
The 1200-class chamber typically holds several packer briskets, multiple full rib racks, or a small whole hog in one load, with roughly 1000–1150 sq in of main grate space. Exact capacity depends on cut size and how tightly you load, so confirm your menu volume with us when quoting.
What fuel does an offset smoker use?
Offset smokers run on real wood splits — oak and fruit woods are popular — or a charcoal base topped with wood chunks for smoke. The firebox burns clean, hot fires for thin blue smoke. This wood-fired approach is what gives stick-burner BBQ its signature bark and flavour that pellet or electric units cannot fully match.
