Oversized equipment wastes energy heating and holding capacity you never use; undersized equipment runs flat out and inefficiently. Right-size refrigeration and cold storage

Over-extracting therefore wastes energy twice. The fix is a balanced system sized to the actual cooking load with properly arranged make-up air, so you remove what you must without needlessly dumping cooled air.
